His career from an early age was ignited during and after his training when then he took on a culinary challenge of moving into Michelin starred restauraunts, boutique hotels and self suffient small hotels restaurants with estates whilst under taking his first HeadChef role at the age of 26.

With his hunger from early years of his career with Willie Deans in Scotland and using mostly wild produce shines throughout his style of good and signature dishes. 

 

Then going onto showcase Scottish produce in Maryland in Chesapeake bay, with festivals and a grand banquet working alongside americas East coasts most affluent of chefs at that time , followed on was stagier stints from Michel Richard in Washington, Georgetown USA, Andrew Fairlie in Scotland and worked alongside Tom Kitchin and his team in 2007. 

He then took part on his Tv appearance a few years later on Masterchef professionals Uk to become a finalist under the watchful eyes of Michel Roux and Monica Galetti. 

 

 

Chef Michael then Embarked on his dream job living a dream within many, which was then it felt right to become a Private chef, starting in the French Alps then out to Sea under sail crossing the Atlantic and racing in the St Barths Regatta.

His then Captain and mentor at the time taking him to work for Sir Michel Reybier who was founder of La Reserve hotel groups and owner of Cos d'Estournel, its Chef Michael's most inspiring job to date, and stayed with him and the team for 3 years at sea and in the Swiss and French Alps. 

 

Following this was Sailing the Patagonia canal and clients voyage to Antartica, making further learning skillsets and and sailing teqniwues and experinced in rural destinations to new waves in his career and life, alongside connecting with vineyards in the napa valley and other suppliers on his tracks. 

 

 

 

 

 

Rapidily adapted quickly to fresh food market runs early morning before guests waken up, traveling extensively across the globe, creating menus daily and scheduling changes to the lifestyles of his clients and staff was a natural transition.



He moved onto the next experience to his career which was to work for Sir Valentino Garavani outside Paris at Chataeu du Ville, where Kim Kardashian and Kanye West got Married. 

He quickly learned here how to be as flamboint in his style of cooking from garden to dining room within minutes as Sir's elaborate decor and events held in the gardens and lavish ballrooms,  

 

 

Following from this had clients just off the Champs- Elysées  before going back to Sea recently, after alongside working backstage with the filming crews on the Game of Thrones on St Michael's Mount, Pinewood Studios and at various other rural destinations and picking up another Winner of an International award iBarcalona with Myba Yachting.
